Octopus or pulpo can be an intimidating ingredient to work with but is delightful when cooked properly. In spite of its appearance, this seafood delicacy is fairly simple to cook. Slow cooking methods are the best and involve slowly cooking the meat until it becomes tender. Avoid rapidly cooking methods as they tend to create octopus that is tough and chewy.

In Panama pulpo is prepared in a number of different ways, boiled, grilled, poached, etc.

It can be found in ceviche, summer salads and don 't forget to try one of the most popular dishes, Pulpo al ajillo or garlic octopus!
